I Quit Sugar 8WP Recipe: BLAAT Toastie

This is no ordinary BLAT sandwich! We’ve added an extra A for apple and swapped the tomato for tahini, because... tahini.

Ingredients

  • 2 thick slices sourdough bread, toasted.
  • 60 g bacon (1 rasher), rind removed and cut in two.
  • 1/2 apple, sliced into thin wedges.
  • 1/2 avocado, mashed.
  • 2 leaves iceberg, cos or butter lettuce.
  • 2 teaspoons tahini, to drizzle.

Directions

1. Add bacon into a frying pan on medium heat. Cook for 2 minutes. Flip and cook on the other side until crispy. Remove and place on a paper towel.

2. Add apple pieces into the frying pan with the leftover bacon fat. Cook apple on both sides until slightly softened. Remove and place aside.

3. Once you’ve toasted your sourdough, spread with mashed avocado, layer with lettuce, bacon, apple, and drizzle with tahini to serve.


Note

Paleo option: Use two slices of Paleo Veggie Bread in place of sourdough. Or alternatively, use an extra 2 leaves of cos lettuce and 1 extra rasher of bacon and turn into a breakfast salad.
