I Quit Sugar recipe: Mocha Choc Chip Cookies

Cookies with chocolate and coffee? Enough said. Try these easy Mocha Chip Cookies that may have you reaching for another rather quickly!

Ingredients

  • 2 1/2 cups almond meal.
  • 1/2 teaspoon bicarbonate soda.
  • 1/2 teaspoon sea salt.
  • 120 g butter, softened.
  • 1/3 cup stevia granules, powdered.
  • 1 teaspoon vanilla powder.
  • 1/2 cup cacao nibs.
  • 3 tablespoons raw cacao powder.
  • 1 1/2 tablespoon coffee, ground.

Directions

1. Preheat the oven to 180 degrees and line a baking tray with baking paper.

2. Pulse the almond meal, bicarbonate of soda and salt briefly in a food processor. Add the rest of the ingredients and blend a little more.

3. Spoon heaped tablespoons of the mixture onto the baking tray and press down with your hand to flatten.

4. Bake for about 8 minutes until golden. Cool on wire racks.
