Ingredients
- 1 cup radicchio leaves, roughly torn.
- 1 cup mixed salad leaves.
- 1 small fig, sliced.
- 1/2 cup toasted walnuts.
- 80 g shaved turkey breast.
- 20 g hard blue cheese, crumbled.
Dressing
- 2 teaspoons Dijon mustard.
- 1 tablespoon extra virgin olive oil.
- 1/4 teaspoon apple cider vinegar.
Directions
- 1. Add all salad ingredients into a large mixing bowl, toss to combine.
2. Place mustard, oil and vinegar into a small jar. Stir to combine. Drizzle over salad and toss to coat. Serve.
Note
Vego? Leave out the turkey, this salad still tastes great without it!
