Bacon + Peanut Butter Cookies

I Quit Sugar - Bacon + Peanut Butter Cookies

How do you like your bacon? Crispy? With an egg on the side? How about in a cookie? Try this snickery-bacon cookie for a delicious weekend treat!

Ingredients

  • 100 g bacon, rind removed and chopped finely.
  • 1 cup peanut butter, crunchy.
  • 1/4 cup rice malt syrup.
  • 1 teaspoon vanilla powder.
  • 1/2 cup arrowroot flour.
  • 1 teaspoon baking powder.
  • 1 pinch sea salt (if your peanut butter isn't salted).

Directions

1. Preheat oven to 160°C/325°F/Gas Mark 3 and line a baking tray with baking paper.

2. Add bacon pieces to a non-stick frying pan on medium heat (you may need to add a dash of oil). Cook until bacon pieces are crunchy, about 5 minutes. Place into a large mixing bowl.

3. Add remaining ingredients into the bowl, and stir until you form a smooth batter. Scoop up 1 heaped tablespoon of mixture and roll into a ball. Place onto the prepared baking tray and flatten slightly.

4. Place cookies into the oven and bake for 12-15 minutes until lightly golden on top. Once cooked, remove from the oven and allow to cool on a wire rack.


Note

Make these vegetarian and vegan: simply omit the bacon from this recipe, it tastes just as nice!
